Inside The Kitchen, winner of Best Red Hot Restaurant: Short’s Brewing Company in Bellaire

“I kind of started when I discovered beer and home brewing in college,” Joe Short said of how he started Short’s Brewing Company in Bellaire.

Joe opened the pub in 2004.

“It’s not on your way to anywhere and we’re flattered by people who go out of their way to experience the countryside and northern Michigan,” Joe said.

Food was not part of the original plan.

“It felt like people needed something to eat, okay, let’s go,” he said.

Pretty much everything is homemade, and they also try to use things they would use in beer for other dishes.

“Just to connect the whole beer and food part,” Joe said. “So instead of a little sugar, we’ll use malt sugar.”

Pork pizza dough in buenas tardes nachos, it’s the same idea.

“It’s got our Starcut Ciders hard cider in it, and in a custom Short’s Brewing special seasoning blend, we roast it and brine it in the cider and it’s all hand-pulled,” Joe said. “You can put your own spin on things, we don’t buy beer off the shelf and sell it, we like to create our own flavors and the same sort of thing applies to cooking.”

The attention to detail in every bite earned them MyNorth’s Red Hot Best award for the Charlevoix and chain of lakes region.

“Honored that people recognize how much we love and care about what we do here,” Joe said.

He describes Short’s Brewing Company’s menu as “greatest hits.”

All of our dishes are named after songs from the band “Ween”.

“We’re a huge fan,” he said. “My wife and I were working on the menu after returning from a concert road trip.”

Now it’s like the album that never gets old.

“A little surreal, really,” Joe said of how far Short’s Brewing Company has come. “I feel like I’m in this dream that never ends, you know, like I’m waiting to wake up at some point. We’ve tried to come up with a lot of good things in our community and with our employees and create a kind of culture to help shape the world we want to live in.
